Tilachi Poli, also known as Tilgul Poli or Sesame Jaggery Roti, is a traditional Maharashtrian sweet dish. It consists of a sweet filling made from roasted sesame seeds (til) and jaggery, encased in a dough made from wheat flour. The filling is prepared by grinding sesame seeds and mixing them with jaggery to create a sticky and sweet mixture. The dough is rolled out, the filling is placed in the center, and the edges are sealed to form a flatbread. The poli is then cooked on a griddle until it turns golden brown and crispy. Tilachi Poli is typically enjoyed during the festival of Makar Sankranti and is considered a symbol of good luck and prosperity. It has a rich and nutty flavor, with the sweetness of jaggery complementing the earthy taste of sesame seeds.
